Baked Butternut Squash

This is such a simple and tasty dish..especially in Thanks giving season when all these lovely orange squash are ripe and crying out to be used! :-) And baked butternut squash is not only healthy, but a delicious comfort food in the cold season . . do you really need any more reasons than this to use it?! ;-)



Ingredients

1 medium sized organic butternut squash cut into rings or 1/2 moons (I keep the skin on and seeds in them because they are healthy and I think they taste delicious when roasted)
Olive oil
Sea salt
Italian herbs
Old Bay Spice
Paprika flakes
Cayanne pepper or black pepper

Method

Preheat oven to 415 degrees Fahrenheit.

Oil a baking dish -- I like to use earthen ware or glass dishes because it tastes better -- and rubbing the butternut squash pieces in olive oil, arrange on the dish. Sprinkle generously with salt and all the spices to your taste.

Bake for approx 45 minutes or until a little golden crispy on the edges/peel is blistered and they are tender.

Serve hot with a greens and avocado salad and a grain dish. :-)
